Dinner Last Night: Valentine’s Edition

024

I had an excellent Valentine’s Day! Did you?
I decided to make London Broil for my family, a step up from the usual tacos and soups (like I mentioned yesterday) and we enjoyed it with wine, my green bean recipe, and a fresh tossed salad! Oh, and of course some red wine!
Brad came to join us and it’s always so excellent to have him around my parents and my sister. I love how well he fits in, and I loved that we all sat at the table (we have a tendency to park in front of the television with our meals and not really talk) enjoying food and company.

I am so blessed that I have a great family, a sister I can call my best friend, caring and funny parents…and I am so glad I have Brad and that he fits in with us and vice versa (I feel very comfortable around his family). I bought everyone a little present (some Orla Kiely note cards for mom, tea for sister, and my dad’s favorite gums and cinnamon candies) and treated everyone to a great meal. (Brad deserves the credit for the perfectly cooked meat…not sure if I could’ve done it on my own…I’ll have to do it next time!)

Are you ready for the weekend?
I so am. Last week was so long, this one definitely made up for it. It’s already Friday and I have a 3 day weekend thanks to President’s Day.
I plan on getting a haircut, enjoying an anniversary/Valentine’s dinner with Brad, and sleeping in as long as I can without wasting the day.

Have a great weekend, folks!

Dinner Last Night: Baked Ziti

ziti

I feel like it’s been forever since I cooked.
In actuality, it’s been about two weeks or so. But still.
I found this recipe for baked ziti on Pinterest. When the budget is tight, as it always is lately, I think pasta is the best way to go.
So filling, always satisfying.

I was also craving a nice, fresh salad. And I think it’s a great compliment to the heavy, hearty ziti meal.

IMG_4200

It makes me happy to make a good meal that my whole family enjoys.
Cooking is fun.

Happy Friday, everyone!
Here’s to a good weekend!

Dinner Last Night: Um…I ordered pizza.

Yesterday, after a week of exhaustion and nausea and headaches and general bleh feelings, I took a sick day.
There are lots of things going around, a lot of people who are worse off than me, but I think it’s important to listen to your body and your mind and take the time to rest and relax when you’re feeling ill…especially if you actually are ILL! Do not come around me with your infections, flus, or your fevers. Trust me, we will both feel better in the long run.

013

Considering the situation, I didn’t leave the house (or my bed, really) all day. So dinner came to us, from Domino’s.
You can say what you want about Domino’s but it never disappoints, is reasonably priced, and I GOT TO ANSWER THE DOOR IN MY PAJAMAS AND RECEIVE HOT AND READY TO EAT FOOD. Um, what is better than that?
Sure, I love cooking, but I don’t love germin’ up my family or going to the grocery store when I’m sick.

So that’s that. Woo hoo!

This week, with the holiday and now my sick day, has been goofy. It’s already Friday. Wowza.
My friends Jenna and Ed leave for California tomorrow…it went so fast. We are enjoying a meal at my favorite Mexican place tonight before they ship off for the next while. Then Saturday, we are supposed to go see Brad’s co-worker’s brother’s band (mouthful). I like having plans for the weekend, with a nice mix of sleeping in and errand running along the way. Oh, and seeing Brad. Just left the guy, like, a second ago and I already miss the kid. Love is silly awesome.

Have a great weekend, friends!

Dinner Last Night: Traditions

My friend Dana is an amazing cook. Like, for real. And it’s not just that she’s good at it…she loves to do it.
We get spoiled yearly with an amazing “family dinner” stuffed with gnocchi and roast chicken, fresh tossed salad and orange slices drizzled with oil, salt and pepper. This was the second time, but I’m ready to go into my 60s continuing this tradition.

tablecandidmulledlaughsservedsocutie

It was just so nice to listen to Christmas music, drink some wine, eat tasty food, and share some laughs.
I have sweet friends.

On a side note, I am obsessed with B&W photos lately. Not sure what sparked it in me. But there it is.

It’s already Friday. The holidays are so wonderful, but they goof up “real life” and I am totally confused by the days.
It’s going to happen again next week, with New Year’s!
I work tomorrow, but tonight I have an ugly sweater party (like last year) and some family is coming in. Especially excited to see my
lil cousin Danny and my cousin’s baby Niall.
Should be exciting to see the ever-growing children in the family.
Once again…time flies.

Dinner Last Night: Stir Fry

IMG_3998

Chicken. Carrots. Broccoli. Red pepper. Onion. Garlic.

Add meat and your favorite veggies and you have a delicious stir-fry. I use House of Tsang stir fry sauce…it’s delicious.
Cheap, easy, and satisfying. I also did my green beans and some brown rice. Everyone had happy tummies.

Couldn’t be happier it’s Friday!
A little scared that Christmas is all too close though. It’s come too fast and it’s going to be over too soon.

But I’m ready for the weekend. No work, sleeping in, spending time with my boyfriend and my friends.
All will be well.

Have a great weekend!

Dinner Last Night: Chili and Mac and Cheese

chilimaccheeseJPG

Yesterday was quite terrible there for a while.
I was having moments of anger and disappointment and felt like I could cry at the drop of the hat.
After lunch, I started to feel better, but I was still in the mood for some comfort food.

Chili has really come into the rotation at my house. I can’t help it, it’s cheap and easy to make and it always satisfies.
I’ve been having fun adding new ingredients and taking things away to make new chili all the time.
I feel bad that I haven’t been all that adventurous with my food so I thought I would try a chili mac.
But to save some time, I made some Kraft dinner mac and cheese to serve with the chili.
When I took this picture, they were separate on the plate, obviously.
But they were quickly mixed together and it was so tasty and super filling. I maybe took a nap afterwards.

In the background, you may spot the corn muffin. This has become a necessity for chili. Jiffy corn muffin mix is 75 cents and makes the quickest, tastiest corn muffins ever. Maybe one day I’ll try my hand at something from scratch. But more on that later…

It’s the weekend! I know it will go by fast, and that saddens me.
Work and holiday obligations galore.
There’s some good news, though…the holidays are getting closer and that means my friends Ed and Jenna are coming in from California!
I know it will be crazy trying to see them with everything that goes on this time of year, but I can only hope for some quality time.
They arrive tomorrow and, though I won’t see them right away, I’m wishing them safe travels!

Here’s to a great weekend! Good luck with shopping/creating/wrapping/whatever it is you
need to do in this second-to-last weekend before Christmas!

Dinner Last Night: Sausage, White Bean, and Kale Soup

IMG_3810

It’s that time of year…for cold and flu season. I work around a lot of people, so I run the risk of getting a cold.
My poor boyfriend is recuperating from one, and lots of people around me are droppin’ like flies.
I wasn’t feeling all that great yesterday, either.

So I decided, cold day, cold season…why not make some soup?

I saw The Curvy Carrot’s recipe for Kale and White Bean soup on Pinterest, but I decided to add some ground sausage to it.
Cooking has been a real adventure for me. Especially when I’m eyeballing and tweaking recipes to make them my own.
But this is some great soup (I didn’t use the heavy cream), and I would make it again in a heartbeat.

IMG_3792

Besides, it’s hard to go wrong when this lovely triumvirate is in the recipe. And garlic, of course.

It’s Friday! Yay! I’m glad to have a weekend off, though I’m sure I’ll be surrounding myself with all the bits and pieces I’ve acquired to make some Christmas presents. The goal, as always, is to spend little to no money this weekend. Unfortunately, I know I’ll have to spend some, but it’ll be for Christmas presents, and I like getting presents for people! I’d do it all the time if I had the means.

Have a great weekend!

Dinner Last Night: Tacos…Again

006

If I haven’t the slightest idea (or the funds to get inventive) what to make for dinner, chances are I’m going to make tacos.
No one complains, certainly not me, and there’s plenty to go around.
Like last time, I did double decker tacos for myself. So good.

Well, it’s already Friday. Crazy for me because I really just started the work week. But that’s fine with me!
I have to work tomorrow, which is a bummer, but I have an engagement/housewarming to celebrate with some friends so that will be lovely!
Also, I really need to get cracking on some of my projects for Christmas…looks like I’ll have to get out of my usual PJ and TV routine that consumes my weekend and break out my gear (or at least use my hands while I watch some TV ha ha).

Have a great weekend, y’all!

Dinner Last Night: Thanksgiving Edition!

themeal

How was your Thanksgiving (if you celebrate)? Mine was delightful.
I’ve really enjoyed just spending time with my family, the four of us cooking and eating together. Less stress than traveling around.

turkeycasserolesgreenbeansboxwine

We had a most delicious brined turkey, our usual asparagus, biscuits, and stuffing. But Maria and I contributed dishes too! I made my favorite green beans and a to-die-for twice baked potato casserole (Paula Deen is a genius). Maria made glazed carrots.
And yes, we had some wine. From a box. We’re on a budget.

It was a great day! I love the holidays.

And now I get to enjoy a little mini-vacation, 4 days work free! I have to work today, but I took Monday and Tuesday off.
I just need some time away, to relax, sleep in. I’m actually going ziplining on Sunday!
Should make for an interesting long weekend.

Happy Friday, everyone!

Dinner Last Night: Chili and Cornbread

IMG_3368

Chilly night? Eat chili. It just makes sense. Maria asked for it a few days ago, and it was basically cemented that that’s what I’d be cooking on Thursday. I’ve made chili quite a few times, it’s nothing unique. But the best part is adding and subtracting things from your recipe to find your perfect chili mix. I’m still working on that. But this was probably my favorite so far. I have to keep it on the mild side for my mom, but the rest of us added Tobasco…heck yes.

IMG_3354

I suppose I could go all out and try and make my own corn muffins, but this classic mix is less than a dollar a box. So, yeah. That’s what I’m going to do. You can’t fail with it. I learned this week that I’m not really the best at baking. You need to be super patient and by the book…I struggle with that when it comes to cooking. So baking will take some time. So thank God for these super easy mixes. Jiffy, you’re the best.

IMG_3364

Are you ready for the weekend? I am. I know I had a short week, but that actually made it harder. I got super-relaxed during my 3 day weekend, and it was difficult to get back into the swing of things. What am I going to do when I have my 4 day weekend next weekend?
I may never want to go back to work again!
Then again…I don’t really ever anyway. So what would be the difference?

I work tomorrow, but afterwards I’m going to see Breaking Dawn Pt. 2! I’m both super-excited and super-sad to see one of my favorite series come to an end. I know it’s guilty pleasure material, but I’ve loved the books since I read them in London and I love the movies and own every single one. I’m pretty sure I will be shedding some tears (like I did with the last movie). I just hope everything wraps up nicely and they do it justice. The end of the book is beautiful. So I’m hoping for the same here.

Otherwise, the weekend is wide open. I’ll probably work on my chain and single stitches some more. And hopefully break out the camera.

Here’s to a good weekend!

11.09.2012

Dinner Last Night: Stir-Fry and Lo Mein

013

I love making stir-fry. It doesn’t break the bank, you know every ingredient going in (unlike Chinese buffets and take out), and it’s impossible to screw up. I’ve made rice plenty of times, but Lo Mein is new to me. I looked up a couple of Rachael Ray’s recipes, but I ended up mixing my own. Spaghetti noodles with some hoisin sauce, soy sauce, bell peppers, onions, and garlic. I’d say it was an excellent side dish, but it ended up taking the majority of the space on my plate. Next time, I’ll use less soy sauce, or maybe add something sweet. It was a bit too salty.
Still…a great meal. I can’t wait to play around with it some more!

005009

How was your week? I’m so ready for the weekend!
I have absolutely no plans this weekend. Which is strange. I haven’t had a Saturday without some obligation (work, weddings, or appointments) since Sept. 22! I’m actually kinda curious what I’ll end up doing. Anything is possible and it’s all up in the air.
On top of that, I have off on Monday! At the very least, it’ll be a great few days to catch up on sleep, eat some tasty food, wander around finding adventures, and working on some more craft projects I have lined up.

Have a great weekend!

Dinner Last Night: “Thunder a la Vodka”

010

Money is so tight these days. It’s not just me, I know this, but it’s still very upsetting and difficult all the same.
Despite that, I’ve been trying to keep up with my weekly dinners. The main reason I love doing these dinners? I like teaching myself, trying new things, and keeping the menu at home interesting. I live at home with my family, and we tend to get stuck in ruts eating the same old things. I like to bring different ingredients into the house.
And before I started doing this, I would only ever cook grilled cheese sandwiches and cheese omelets.
I have faith in myself when I finally grow up. Whenever that is?

Back to the money situation, I had to come up with a dinner solution that wasn’t going to break the bank. Enter PASTA. It was 1$ for a box of fettuccine. I’m sorry, but during these tough times, I am thanking the Lord pasta exists. Still, it can get a little boring. Enter Brad! He taught me about his special pasta trick, Thunder a la Vodka. Basically, it’s a mixture of vodka sauce and alfredo sauce. Delicious as is.
But I didn’t just want a plate of pasta. So I bought some Italian sausage and whipped up my special green beans.
One tasty dinner indeed.

007006008009

This has been a very strange week. Sandy, Halloween, a new month.
I’m ready for the weekend.
I have work, but I’ll be enjoying my usual arts and crafts.
I’m also bringing back the Black Swan for a belated Halloween party with friends.
Can’t go wrong!

Have an excellent weekend!

Dinner Last Night: Buffalo Chicken and Potato Casserole

dinner1

It’s been a while since I put a nice little meal together from (mostly) scratch. I’ve done a lot of tacos and chili, and I wanted to try something new for a change. I found this Betty Crocker recipe on Pinterest (but, of course!), and I would highly recommend it (even though it looks nothing like the pretty picture on the website…what ever does?).

dinner2dinner3dinner5

This is comfort food at it’s finest, but it still has a nice kick from the wing sauce. Delicious!

Happy weekend!

Dinner Last Night: Sausage and Egg Breakfast Bites

005

Apologies for the not-so-pretty photo. I’m not the best at pancake shaping, and there are a LOT of chocolate chips in that.
I was looking forward to breakfast all week. I just love it. Sausage, bacon, eggs, pancakes or toast or waffles or French toast or English muffins.
It’s all so dang good.

Usually, when I make breakfast for dinner, I scramble a bunch of eggs. But I decided to go with something different, something Brad has made for us a few times but my family has never tried. That would be sausage and egg breakfast bites from Mark’s Daily Apple.
It is the simplest thing to make and so delicious.

007004

My family ate the whole thing. I was looking forward to some leftovers for a quick breakfast today, but alas.
I’m glad it went over well, though.
I love cooking now, and my family are the best critics. Mostly because they love what I make.

006

In other news, I’m off to Seneca NY for the weekend! It’s Brad’s cousin’s joint bachelor/bachelorette party. I love the Finger Lakes, and I’m in desperate need of escape. I have a three day weekend. We should be back on Sunday, but we are taking are time, so I’m looking forward to a day to recuperate from partying in a limo-bus and drinking wine for long periods of time.

I’m a little bummed out, Mohegan Sun is having their Oktoberfest and I had such a blast last year. I was looking forward to it.
But come on. There’s no way I won’t have a good time this weekend.

Have a great one, guys!

Dinner Last Night: Tuscan Pasta

dinner

I don’t know about y’all, but I had an AWFUL week. The last couple days were extremely hard. I know it’s a “short” week, but all the crap caught up fast. To top it off, I have work tomorrow, so my week isn’t over just yet. I sure wish it was. UGH.

Anyway, after everything, I couldn’t wait to make some comfort food and drink some wine. And honestly, pasta is a great comfort food. So easy to make and always delicious. I used this recipe, and it required very little effort.
And I had to get wine.
Wine was necessary.

Have a good weekend, everyone!!!!!!

Dinner Last Night: Buffalo Chicken Chili

002

For the second week in a row, I’ve made dinner in the crock pot. This is Buffalo Chicken Chili, courtesy of a Betty Crocker recipe I was given via Facebook! It was so damn tasty. It wasn’t as Buffalo-y as I had hoped, but it was so delicious. Also, if you plan to make this recipe, expect more of a soup than a thick chili texture.

I made sure to cover my bowl with blue cheese and Colby jack, and scoop everything up with Tostitos multigrain scoops! I nearly died.
Heaven in my mouth.

Once again, it’s Friday. I have work tomorrow, and Brad is heading to Philly for a wedding so I’m winging this weekend.
Hoping to fit in some fun.

Have a great one guys!

Dinner Last Night: Set It and Forget It

004

I had a dentist appointment right after work yesterday (boo), so I knew I wasn’t gonna have time to do my usual post-work grocery shopping and slow and lazy cooking. I bought a 4 lb pork shoulder the day before, threw a bunch of spices and a whole onion in the crock pot with it, and let that sucker cook for about 11 hours. MAN OH MAN. I can’t express how much I love pulled pork. But the fact is, if you put anything in the crockpot, it will more than likely be amazing. And the best part is, you don’t even have the touch the damn thing for like…8 hours.
You don’t even really have to do proper mixing. Everything meshes together on it’s own. Lazy cooking to the MAX.

I’m glad it’s Friday. These weeks have been so rough. And as the 8 hours I’m work drrrrraaaaagggg on, my evenings blow by. I come home, get comfortable, and the next thing you know it’s 11 PM. I don’t even know how that happens. Not fair.

I’m looking forward to my friend Crystal’s bridal shower this Sunday!
I think I’m finally kinda getting the hang of this wedding season thing.
This was the first year I actually had/have friends I have known forever who are my age tying the knot.
I’m spending my own money (not relying on the family, like with relative weddings) for presents and cards and whatnot.
I’m a big girl now.

Have a great weekend, folks!

Dinner Last Night: Pesto Chicken Florentine

pestochick

I don’t know about y’all, but this week seemed to drag in my opinion. I’ve been desperately waiting for today. I just haven’t had the patience to deal with people or work or boredom for 8 hours straight. I was thisclose to totally copping out and skipping making dinner altogether. Money has been stressing me out (so I didn’t really wanna buy groceries, the prices really rack up depending on my ingredients) and I have just been sick of it all. But when I want to make a cheap, quick dinner, I’ve realized pasta is the way to go.

I discovered the recipe for Pesto Chicken Florentine through the AllRecipes.com Dinner Spinner iPhone app. It’s been really helpful. There are a few shortcuts here, but it made for a delicious meal. I bought fresh garlic bread from the bakery at the store, a great compliment. And you can never go wrong with a salad chock full of cherry tomatoes, carrots, broccoli, sunflower seeds, and more.
My mom and I blasted the Frank Sinatra Pandora station and I drank our favorite cheap red wine, Riunite Lambrusco.

Totally worth it. The meal cost less than 15 dollars and everything was done in about 30 minutes.

I’m so glad Friday has arrived. Not so happy that I have to spend a good portion of tomorrow mandatorily volunteering for work.
I know, I’m forced to volunteer. That doesn’t make much sense, eh?
But otherwise, I don’t have to wake up super early either Saturday or Sunday, I get to spend time with my boyfriend, and I’m looking forward to a much needed girls night. No clue what I’ll really be getting into, but that’s the fun of it all!

Have a great weekend!

Dinner Last Night: Turkey Tacos and Tornado Warnings

mealfood

My sister had a bit of a tough week, so I decided to let her choose what we’d be having for dinner last night. I don’t even know why I bothered, because I knew it would be tacos. Don’t get me wrong, I love making (and eating) tacos, but I’ve been having fun coming up with things from scratch. I suppose I could make tacos from scratch but…those boxes are so damn easy!!!

I did take it upon myself to add my own little twists and turns to the meal. For starters, I got ground turkey instead of beef or chicken. I make sure to get 2 lbs of whatever meat I’m using, and two boxes of the dinner. We are big eaters at the house. I got both hard and soft shells. I decided to get some refried beans and create a “double decker” taco like they have at Taco Bell. Refried beans are spread on a soft shell and you wrap that around your hard shell filled with whatever the heck you want. I also made another batch of guacamole. I’m getting pretty good at it, and it’s incredibly tasty. I also bought a Rice Side of Mexican rice and added black beans to it for a side.
I try to make sure no one goes hungry. And I think I done good.

smashbeansandrice

As for the tornado warning…we were hit with a pretty bad storm in NEPA. We don’t get tornados around here really, so the warning was scary. I always stop at the grocery store after work to pick up my dinner ingredients on Thursdays. The skies were still clear, not as foreboding as it would become. My mom and sister kept calling, though, and insisting I’d get home as soon as possible. I really wanted to pick up some
Bud Light Lime to drink while I cooked/ate, and the bummer is none of our grocery stores have little beer sections like they do in Kingston/Wilkes-Barre area. I was prepared to cut my losses, since my family wanted me home in order to miss the storm, but I realized I would be passing a beer distributer. I decided to duck in, grab what I wanted, and leave.

The only problem was, that’s when the storm decided to start. As the woman behind the counter was ringing up my purchase, a massive gust of wind blew both the entrance and exit doors open, and fliers and signs flew everywhere. They wouldn’t close on their own. So the other shoppers helped close the doors before everything got whipped and wet and the woman locked the doors. Just because I needed beer so bad, I ended up getting locked in a beer store with a bunch of strangers for about 10 minutes, waiting for the storm to calm down. Once I was finally able to leave, it was still torrential, but the wind had calmed down. As I was driving, I passed so many branches and bunches of the trees that had come down on the road and nearly hydroplane on rushing water and puddles. It was scary, but I think the beer store kind of saved my life. What’s to say I wouldn’t have been at the wrong place at the wrong time, getting my car whipped around and hit with tree branches? It’s silly, but my craving for a crappy beer kept me out of danger? Though being locked in a store wasn’t exactly…comfortable.

BLL

Needless to say, my family was a little scared.
But once I came home with the beer, everyone took one and we were happy to be home together, safe and sound.

Dinner Last Night (AKA Green Bean Queen)

meal

This was my first time cooking again in a couple of weeks. I was craving after my guacamole experience. I’m loving the process of cooking and creating more and more. This meal was easy to make, but I still got my hands dirty and perfected my favorite veggie.
Last week, I bought a bunch of fresh green beans at the Farmer’s Market and couldn’t wait to do something with them. I knew they were gonna be my veggie, but I didn’t know what else to make. I decided on crispy baked chicken tenders and some mac and cheese (from Kraft, with the squeezy cheese…so good). The baked chicken was tasty. I love the process of coating the chicken. I added a bunch of spices to the flour and used panko crumbs to add a good crunch. I baked the chicken for about 30 minutes on 375. It stayed juicy but I didn’t have to worry about salmonella (I’m still learning how to cook chicken comfortably).

flourIMG_2716prebake

But the deal is, I love making green beans. After having fresh veggies, it’s hard to go back to steamed, boring frozen vegetables.
I prefer to sauté my green beans with olive oil and chopped garlic. I add some salt, but I also added a squeeze of honey. They got nice and crispy but soaked in all the lovely flavors. So, not to toot my own horn but…TOOT. Everyone in my family loves them, too. My mom even said that she’d be completely content just eating tons of green beans on top of some rice. There are never enough!

beans

In other news, it’s Friday! I survived my first full week after vacation. And it wasn’t so bad.

Tomorrow, one of my oldest friends is marrying her man of 9 years. I can’t believe it! We’ve grown so much since they first started dating and now they are getting married! I’m 25, people I know are starting to get engaged and married and maybe have kids eventually (eek!).
I’m not ready for all this stuff! But I’m excited to start celebrating all the love!
I’m also excited to celebrate my friend Lauren’s 25 birthday!
Life is so good lately.

Have a great weekend everyone!
